Although books could certainly be assigned DOIs, a DOI is not used to reference a book in APA style. The format for a book or chapter in a book is different from the format for an article.
Generally in advanced fields of study such as yours, the need is to cite a chapter in a book, because the relevant information was found within a specific chapter, and the entire book wasn't used. This enables you to credit the author of the particular chapter (if listed) in addition to the editor of the book.
The APA manual includes several examples on pp. 203-205.
